1. Every one has their own preferences. But majority of them would recommend Ubuntu for beginers.

2. Try out a bunch of them with the live cds. The one you like best will be the easiest for you. Personally I like Chubby Puppy for just playing around. I think all distros are pretty easy as far as the basic OS goes, It's the individual packages or programs that get a little difficult.
