If I set up a Linux server to work with workgroup of Windows PCs, whould I use NFS or SAMBA.?

Samba provides Windows File and Print sharing capabilities, so you would use that.

NFS is usually used to share files with other UNIX systems but you can use it under Windows, e.g. via http://www.labf.com/nfsaxe/index.html…
